We have to admit. We’re a huge fan of sweet potato. We like it roasted, baked and don’t even get us started on our love for sweet potato fries. We could of course bore you with the fact that sweet potatoes are rich in vitamin C and vitamin B6, which are important for brain and nervous system, or that they’re a good source of potassium and magnesium, helping you regulate blood pressure, but we’d rather mention that we combined it with pumpkin to turn it into a comforting, crème puree which matches really well with our rolled-oats*, paired with balsamico marinated mushrooms. This dish is the obvious choice if you’re going for maximum nutritional value without the hassle and bustle.
