Can you name a meal which says “comfort food” more than lasagna bolognese? Clearly, that was a rhetorical question since everyone knows the answer is “no way!”. And that’s where we got to thinking about giving this dish the fast good make-over. We created a bolognese style saus with *rolled oats, vegan pasta sheets and created our own **cashew cheese. Now we’re not saying this dish cracks the code, beating the lasagna served on an idyllic terras in the south of Italy but we like to think we’re pretty close. Buon appetito!
